I haven't stopped cooking, I haven't stopped baking. It just that, these days, I have become a "political watcher"!

Anyway, I went for a noodle-making class and this was what I learned...



This is call green onion fried noodles. My verdict - super yummy. Love the QQ texture.

  2. sure, why not :). it is very easy to do.

    150g flour
    half egg
    spring onion (2 to 3 bundles)
    1 tsp light soya sauce
    1 tsp dark soya sauce
    tinch of salt
    60g of water

    1)mix flour, egg and water and form a dough
    2)cover with plastic wrap for 10 mins
    3)roll out the dough, knead until smooth and form into a ball, rest again for 15 mins
    4)roll out the dough as thin as possible, fold it (like in the pix) and using a sharp knief, cut into strips. set a said.
    5)cut up spring onions, about 2cm in length and deep fry till brown
    6)Prepare a pot of boiling water, put noodles into the pot, add a bowl of cold water into the pot. do not over-cook, about 3 mins (al dente)
    7)drain noodles, put into a plate, add the spring onion, light and dark soya sauce and some spring onion oil. mix them all up and YUM-MO!
